Merry Christmas everyone!! We hope that you all have a wonderful holiday with your friends and family. Need a last minute dish to bring to Christmas dinner? These chocolate turtle cookies are sure to be a hit! I made these for all our friends, family, neighbors and colleagues this year and everyone raved about them.
Chocolate Turtle Cookies
2 dozen
1 cup all-purpose flour
1/3 cup cocoa powder
1/4 teaspoon salt
½ stick butter
¼ stick Crisco
2/3 cup sugar
1 large egg, separated
2 tablespoons milk
1 teaspoon vanilla extract
1 1/4 cups pecans, chopped fine
14 soft caramel candies
3 tablespoons heavy cream
2 cups semi-sweet chocolate chips
1 tsp shortening
1.Mix flour, cocoa, and salt in bowl
2. With electric mixer on medium-high speed, beat butter and sugar until light and very fluffy, 2 minutes
3.Add egg yolk, milk, and vanilla and mix until incorporated
4. Lower the mixer speed and add the dry ingredients
5. Wrap dough in plastic wrap and refrigerate until firm, 1 hour
6. Line baking sheet with parchment paper. Preheat oven to 350
7. Whisk egg whites in bowl until frothy
8. Place pecans in another bowl. Roll dough into 1-inch balls, dip in egg whites, then roll in pecans.
9. Place balls 2 inches apart on prepared baking sheets. Using the back of a 1/2-teaspoon measure, make indentation in center of each ball. If the dough starts to stick to the back of the spoon, dip it into the egg wash.
10. Bake for 12 minutes
11.Microwave caramels and cream in bowl for 2 minutes, stirring occasionally, until smooth.
12. Once cookies are removed from oven, gently re-press existing indentations. Fill each with 1/2 teaspoon caramel mixture.
13. Microwave chocolate chips and shortening in a bowl for 1 to 2 minutes, stirring occasionally, until smooth. Using a fork, drizzle the chocolate over cookies.
14. Transfer cookies to a rack, and cool for 10 minutes
